Now that Christmas, New Years Eve and probably also all your days without work are now over, I guess we all have the same thought: What now? I really miss the Christmas Cookies, the wonderful smell of cinnamon that also reminds me of Christmas and the anticipation of all the wonderful things I am going to eat... Well, I guess that (and my love for sweet things) was the inspiration for my latest baking adventure. Maybe also one of my Christmas presents, a wonderful rose-shaped baking form, helped a little bit. :)
I decided to make a simple Cake in this form since the appearance of the form is already so pretty, one does not want to distract the eater with an exotic taste. But then I thought - why not pimp it up with something healty, like apples? The other thought was: Maybe I should at least try to get some vitamins, even if they are baked in dough, they still count, right?
So I went to the supermarket and grabbed some apples. I took off their clothes.

Some people say that most of the vitamins in apple are in their skin, but I decided to peel it anyway because I know that it doesn't taste so good in the cake. After peeling the pretty little green things, grab a grater (I prefer one with bigger holes) and start grating. Please watch out of your fingers (I know what I am talking about, trust me. Once I grated carrots and I was wondering how red the carrot slices are. Ewww, I know. Gross! Why am I telling you this? I just don't want that happen to you.)
Anyway, after a little bit grating the apples should look like these:
Now you take 4 eggs and mix them up with 150 g sugar and 220 ml oil (you can for example use rapeseed oil) until the mixture is yellowish and creamy. Put in the grated apples and try not to put too much apple juice in it (a little bit is fine, though).
In another bowl put together 300 g flour, 50 g wholewheat flour, 1 teaspoon baking powder, 1 pinch of salt and 1 teaspoon cinnnamon.
Mix everything together and put the whole batter in a buttered form and bake it for about 45 minutes, 180 degrees. Please have an eye on the oven, you oven might be different from mine so I recommend to set a clock and have a quick look once in a while so it doesn't get burned.
My perfect excuse to eat cake - I need vitamins.
