I love to bake and especially when there is an important occasion like birthday parties, dinner invitations, coffee date gifts or something alike. I also love everything that has poppyseed in it and when I saw this recipe in one of my recipebooks I really wanted to try it out immediately, even without an occasion :)
Here is the adapted recipe:
6 eggs
75 g sugar
pinch of salt
100 g sugar
180 g hazelnut or walnut (grated)
180 g poppyseed (grated)
180 g butter
jam (for example raspberry)
Preheat the oven to 180°C. Start with the eggs - separate yolk and eggwhite and beat the eggwhites with a pinch of salt and 75 g sugar until it is stiff and white. After that take the butter and beat it with 100g sugar and the eggyolks until it is is yellow and has a creamy consistence. Add the poppyseed until everything is smooth.
The final step is to fold in the eggwhite (be cautious not to stir too much) and inbetween the folding also add the grated hazelnut.
Fill the batter into a greased cake pan and bake the whole cake for about 45 minutes.
Let it cool on a rack and after you put it out of the cake pan you put a thin layer of raspberry jam (or any other jam you like) and for the final touch you sprinkle powdered sugar and a bit of the leftover poppyseed on it.
